Tangy Bundt Cake with Icing

This delicious bundt cake has an interesting combination of flavors. The addition of oregano to a sweet dish may seem odd but it works wonderfully in this recipe. The lemon acts as a bridge between the sweet and the savory, and it makes the whole cake come together.

How to Make Lemon Bundt Cake with Oregano Icing

For the cake:
  • 3 large eggs
  • 3/4 cups sugar
  • 1 1/4 cups flour
  • 1 tsp baking powder
  • Pinch of salt
  • 1/2 stick melted butter
  • 1/2 cup lemon juice
For the icing:
  • 1/2 cup icing sugar
  • 1 tbsp lemon juice
  • Zest from 1 lemon
  • 1 tsp dried oregano


  1. Preheat oven to 180C/350F.
  2. Grease a bundt cake tin with butter or oil and dust to coat with flour; set aside.
  3. To a mixing bowl, add the eggs with the sugar; with an electric mixer, mix until pale and doubled in size; add the lemon juice and the melted butter and mix to incorporate.
  4. Whisk together the flour, baking powder, and salt in a different bowl.
  5. Gradually incorporate the dry ingredients into the wet mixture and stir well to combine.
  6. Transfer the batter to the bundt cake tin and bake at 180C/350F for 30-35 minutes or until it passes the toothpick test.
  7. Once baked, carefully remove the cake from the tin and allow it to cool down completely on a wired rack.
  8. Meanwhile, mix the icing sugar with the lemon juice, lemon zest, and oregano until a smooth paste forms.
  9. Pour the icing over the cake and serve.
