The young buds, that are not yet leaves, are harvested when they are half inch needles with a light white to silver fuzz. These fine white to silver hairs protect the buds from cold and frost and also give white tea its name.
White tea is quite rare and therefore quite expensive when compared to other types of tea. The tender buds of the Camellia Sinesis is hand picked before the sun rises and carefully placed in silk pouches to shield the buds from direct sunlight. Prior to drying, buds are hand rolled creating its unique shape. The buds are then slowly dried in the shade by a master teamaker. Buds are dried in the shade to prevent oxidation and retain antioxidants.
