A Delectable and Unusual Dry Rub for Grilling

Summer may have passed but grilling season is still very much here! If you want to spice up the barbecue game, make your own dry rub and add Ceylon black tea to it. Slofoodgroup's Pekoe Grade Ceylon Black Tea is a loose leaf tea that adds another layer of smokiness and flavor to grilled meat. Use to marinate dark cuts of meat such as beef, pork, or alternatively over portobello mushrooms. Very easy to throw together, this rub is done in 5 minutes. Very important to use brown sugar as the molasses adds moistness and caramelizes the meat as it cooks. Simply use the rub on your favorite cut of meat and allow to marinate for at least 30 minutes. Grill and enjoy it!

How to make your own fragrant tea dry rub

Makes: approx ½ cup seasoning

Ingredients
  • 3 tbsp Ceylon Black Tea
  • 2 tbsp brown sugar
  • 1 tsp salt
  • 1 tsp ground cumin
  • 1 tsp ground black pepper
  • 1 tsp smoked paprika
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 1/2 tsp cayenne
Method
  1. Bring all the ingredients to a food processor or a coffee grinder and pulse until fine.
  2. Use immediately on any meat and allow to marinate for at least 30 minutes before grilling.
  3. Alternatively, store in a clean, dry jar.
