Learn How to Make Cardamon Saffron Kulfi at Home

Ever hear of kulfiwallahs, a traditional Indian frozen dairy dessert? If you have ever visited any of the Indian subcontinent, you might have just passed by some kulfi. In the streets, the shops and the markets where food can be found, it is likely someone was eating and selling kulfi. For many that are privy to the flavor of food from this region, count yourself as one of the lucky. India, Bangladesh, Sri Lanka and other areas are brimming with food and flavors that are complexly riddled with spices and flavors most Europeans ever would of thought of...

Some may be confused, is this just a popsicle? No, absolutely not; this is not a Popsicle! A popsicle is just water and frozen syrups with fruit concentrate. Kulfi is a frozen delicacy more similar to Italian Semifreddo. Ours is a dessert from afar using traditionally savory ingredients, but kulfi can be made with many different ingredients to give it flavor. Create it however you like, just make sure it tastes good.  

 Check our own family recipe below made using our green cardamom pods and saffron and just a bit of edible silver.

   Cardamom and Saffron Kulfi Recipe 

Prep Time: 10 min

Chilling Time: 6 hours

Total Time: 6 hours 10 min

Servings: 6

 

Ingredients for green cardamom and saffron kulfi 

2 cups heavy whipping cream
1 (14Oz) can sweetened condensed milk
2 tablespoons milk
1 teaspoon saffron strands
1 teaspoon cardamom powder
2 tablespoons almonds, finely chopped
2 tablespoons pistachios, finely chopped
4 sheets edible silver leaf, to garnish
2 tablespoons rose petals, to garnish
2 tablespoons mixed nuts, sliced, to garnish
 
Directions to assemble and make cardamom and saffron kulfi
  1. In a large bowl add the heavy whipping cream and beat on a medium speed for 4-5 minutes until soft peaks are formed.
  2. Add in the condensed milk and beat for a minute until well combined.
  3. In a small bowl combine milk and saffron strands and microwave for 30 seconds and let it sit for 5 minutes until the milk turns a bright yellow color.
  4. Add the saffron milk to the heavy cream mixture and mix with the spatula.
  5. Stir in the cardamom powder, almonds, and pistachios. Mix until well combined.
  6. Pour the prepared kulfi mixture into the popsicle molds or paper cups and freeze for 6 hours to overnight.
  7. Once done, remove the kulfi’s from the mold and garnish with edible silver leaf, rose petals and nuts to serve.
