Cinnamon Chocolate Truffles by Contemplating Sweets


Everybody loves Chocolate

When we asked our friend Alisa at Contemplating Sweets if she would like to try our Sri Lankan grown Ceylon Cinnamon, we did not know what we were getting into.

We did not ask what she would do but we knew she would do something great. These Japanese inspired Nama chocolate just hit the spot.  This recipe pair the smooth buttery and richness of chocolate and vanilla beans, with sweet delicate refreshingly soft notes of cinnamon.

How to tell the difference between Cassia cinnamon and Ceylon Cinnamon?

To distinguish between Ceylon cinnamon and cassia cinnamon a consumer can look at the  cassia and how a relatively thick layer of bark has been dried and rolled into a stick while Ceylon cinnamon is filled by thin of bark rolled into a stick that resemble that of a filed cigar.
