Known for its larger than average size, Pompona vanilla beans these vanilla are definitely the king of vanilla. A leather like pod gives way to an immense amount of vanilla seeds and higher than average vanillin content. Often times referred to as the Mexican cured Madagascar vanilla, these vanilla beans are not blanched in water to kick start the enzymatic process. The higher water content of these vanilla beans makes sun curing vs. water curing the ideal method in order to reduce water content, intensify aroma, and stabilize the vanilla.

Pompona vanilla from Madagascar is not a pure Pompona bean but rather a hybrid of Pompona and Planifolia vanilla that happened after many decades of these orchids growing side by side. This is very similar to how Tahitian vanilla came about and was discovered growing in the wild in Tahiti.
Pompona vanilla is used just like any other vanilla bean such as vanilla planifolia or vanilla tahitensis. To use these vanilla beans for baking, just slice the pod down the center and scrap the inner seeds to add to your favorite recipe. To use for making vanilla extract, we always recommend following the standard ratio as prescribed by the FDA.
What is vanilla Pompona?
Pompona vanilla is a species of vanilla native to Peru, Mexico and other parts of South America. Recently it has been found growing in Costa Rica, Madagascar, and even Florida. Unlike its native Mexico and Peru most vanilla that is sold commercial is hand pollinated. It is a member of the Orchidaceae orchid family.

Outstanding Pompona
I have used these Pompona beans for extract & sugar. I sugar is excellent but the extract is exceptional. After it has been extracted you can squeeze the caviar into the extract. It comes out like syrup.

These beautiful vanilla pods were a must buy for me. I had bought them before and really like how they extract! The pods are oily, long, plump, full of caviar . I use 2 ounces per 8 ounces of alcohol and the nice thick syrupy vanilla tastes wonderful in my baked goods ! Give them a try if you haven’t already. ⭐️⭐️⭐️

I have purchased these beans from SFG 3-4 times. The quality has always been great. I have made both extract and paste with these beans. Both turn out great. SFG pricing is usually one of the more aggressively priced companies and the quality has always been very good. I like it especially when they have a sale.
