Cassia cinnamon sticks are stiff, woody, and have one layer, while Ceylon sticks are very fragile and have many layers. Ceylon cinnamon’s flavor is sweeter and more delicate than cassia cinnamon’s stronger and spicier notes.
- Saigon cinnamon is a species of Cassia cinnamon with a stronger flavor and aroma. Saigon cinnamon has a high concentration of oils and a more pungent flavor than Ceylon cinnamon.

Ceylon Cinnamon Sticks, Sri Lankan
These cinnamon sticks had a spicy and sweet aroma that was delightful! I put some in spiced rum and can’t wait for the results! I open the jar and sniff it almost every day. I also plan to try it in a diffuser.

Love these cinnamon sticks! We use them to infuse cinnamon flavor into maple syrup. Turned out wonderful!

Excellent cinnamon sticks for extracting
I won't have my final judgement until the extract is finished in about 1 1/2 months, but I'm very pleased with the product I received. A good handful of full-sized whole cinnamon sticks that broke easily in half to fill a 32 oz mason jar, and the vodka immediately turned a good dark brown. It looks and smells better every time I open the jar before shaking. ^_^
