The Perfect Vanilla Bean Cupcakes

Hello again!

Karlee here from Karlee's Kupcakes, and I am super excited to share this particular recipe. It’s one I’ve had since the very beginning of my business and has been the key to many happy clients loving soft, fluffy, vanilla bean cupcakes! Considering my business started with this faithful little recipe, I thought it was only fair to share it with you all!

I find that people tend to overcomplicate baking. While it is a form of cooking, baking depends much more on science than on the improvisation you might use when throwing together a pasta or dinner dish with "a little of this and a little of that." I cannot stress enough how important it is to follow baking recipes as closely as possible. Even the slightest increase or decrease in an ingredient can make a big difference!

I also wanted a recipe that could easily translate from cupcakes to a cake, and this one does just that! It’s one of my favorites because I always have the ingredients on hand—no matter how bare my cupboards get!

Classic Vanilla Cupcakes

Ingredients

  • 130g/ 1 cup self raising/rising flour (yes you can get this in the US I use King Arthur brand) 
  • 113g/ 1 stick of butter  
  • 3 large eggs  
  • 150g/ 3/4 cup white/caster sugar  
  • 1 teaspoon vanilla bean paste

 Procedure

  1. Make sure you let them cool before frosting them and they will store in the fridge in an air tight container for 4-5 days!
