Saigon cinnamon packs a stronger punch than Ceylon cinnamon. The intensity in flavor makes it a great option for heavy dishes like stews, curries, and pho, the iconic Vietnamese noodle soup that traditionally relies on this same bold cinnamon for depth. Ceylon cinnamon is much more delicate in flavor and is well-suited for simple baked goods and other dishes with few ingredients. Saigon cinnamon does contain higher amounts of coumarin, so if you're looking to reduce your intake, opt for Ceylon cinnamon, which has the lowest coumarin content of all cinnamon varieties.
