While most people think of gourmet vanilla when they think of Madagascar vanilla, the truth is, more than eighty percent of all vanilla world wide is actually a red type vanilla. It is the red vanilla that is generally used by manufactures of vanilla extract because the vanilla beans are lower in moisture content, contain more vanilla beans per pound and better suited to their purposes.

Things to know about vanilla from Madagascar
Vanilla beans in Madagascar are harvested once annually during the months July and August when vanilla is ripe. Vanilla is grown in light but shaded conditions and interwoven directly in forests and maintained by local villages in the area. Upon harvest it takes an average of three to six months for vanilla to be fully dried and conditioned for export.

Was a little unsure
Wow it is looking amazing. The beans looked smaller and some looked pretty dry. I still cut the bigger ones down the middle. I looked at them 3 days after I had started the vanilla and was amazed at how dark it was already. It is darker than a batch I started in October. I can’t wait to see how this turns out. I would definitely buy again. Don’t let the smaller beans fool you.

Great product, seems excellent for extract
I’m using it to make double-fold and triple-fold extract (mostly as gifts for my extended family). Since I’m doing such high concentrations, I had to cut the beans pretty small to fully submerge them. Since they are not very moist, that was more of a challenge than I was expecting. A few of them were hard enough that when I cut through them they popped and scattered a little bit. That is entirely my issue, not yours. Next time I do this, I’ll use a different internal process, and hood over the chopping area so I don;t have to chase the pieces :) . My layman’s guess is that since they are fairly dry, that I got more of the essence since the moisture was reduced. The weight of the overall product was exactly on. The extract (2 weeks in) already smells wonderful, and is darkeneing up nicely. I suspect that in a year, this will wind up being quite excellent. Thanks for a great product!
Will never buy whole beans again!
They were shipped super fast, vacuum sealed, and the vanilla makes SOOOOO much faster with loose cuts! It’s rich and dark within 10 weeks. By 12 weeks it was even darker. Four months was deeeep brownish black! I’ll buy from them forever!
