How to Make Pure Cacao Extract from Scratch

Rich Chocolate Extract is about to become your new favorite baking accessory!

Just like vanilla extract is made by extracting flavor from vanilla beans, chocolate extract is produced by extracting flavor from cacao nibs!  

And no, adding chocolate extract to a recipe will not make it taste more chocolatey, but rather enhances and intensifies the flavor beautifully, incorporating richness and depth

All you need are cacao nibs and vodka – and some hands-off time – and you have a beautiful jar of chocolate extract ready to use (or gift!) in all of your favorite recipes!

Ingredients

 Procedure

  1. Combine the ingredients in a glass jar.
  2. Seal, shake and place in a closed cabinet or closet.
  3. Let sit for 3 – 6 months, shaking the jar every week or so.
  4. Strain and discard the cacao nibs, return the extract to the jar and freeze overnight.
  5. The next day, check for any fat from the cacao nibs that might have risen to the top and scrape it off.
  6. Store the extract in a sealed jar in a closed cabinet or closet.
