Light and Crispy Tempura Cabbage

Looking for the perfect winter snack? Salty and crunchy, this recipe highlights the best in cabbage. Cabbage is in season right now and it is sweet and mild to taste, which makes it a perfect fit for our recipe. Add a few extra layers of flavor by incorporating both seeds and spices to the batter to balance the sweet taste. Finish it off by sprinkling a generous amount of flake sea salt on top, as well as freshly ground black pepper. Round it out with a kick of chili and a drizzle of lemon juice and it is the perfect snack to enjoy with friends over drinks.

Tempura Savoy Cabbage with Fennel and Nutmeg

Ingredients

  • 1/2 head savoy cabbage
  • vegetable oil for deep frying
  • 1/4 cup cornstarch
  • 1/4 cup all-purpose flour
  • 1/2 cup sparkling water
  • 1/8 cup sesame seeds
  • 1/2 teaspoon fennel seeds
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon ground nutmeg
  • pinch of dried chili flakes
  • pinch flake sea salt and freshly ground black pepper

Procedure

  • Remove the outer layers of cabbage and discard; cut the cabbage in half and remove the core; cut the cabbage into bite-size pieces and separate each layer; set aside.
  • To a bowl, add the flour, starch, mineral water together with the seeds and nutmeg and mix well;
  • Preheat enough vegetable oil in a pot to deep fry; the oil is hot enough when it reaches 360°F/180°C; alternatively, a drop of batter can be dropped in the oil - if it sizzles right away, the oil is hot enough.
  • Dip the cabbage leaves into the batter and coat well.
  • Carefully drop the cabbage in the oil and cook over medium heat until golden brown and crispy.
  • Remove to a plate layered with paper towels to absorb excess grease; sprinkle sea salt, and freshly ground black pepper on top and serve right away. Optional, chili flakes and lemon juice can be added on top.
