Quick and Easy Sautéed Green Beans

Get the most nutrients out of green beans by sautéing fresh instead of throwing an over-processed can of green bean cuts into a  a casserole.

Not only will your dish be much more nutritious but it requires fewer ingredients and is much easier to make. It's also good to make all year round, not just for Thanksgiving, and will soon make its way into your weekly vegetable side dish rotation.

You will only need few ingredients: fresh green beans, garlic, butter or oil, soy sauce and salt and pepper. To make this side dish, bring a pot with salted water over to a boil. Once boiling, drop the green beans (ends trimmed) and cook for 3 minutes. Drain and set aside. To a pan over medium heat, add the butter and/or oil and cook the sliced garlic for 1-2 minutes or until golden. Add the cooked beans and cook for another 2-3 minutes, stirring well. Add 1 teaspoon of soy sauce and cook for 1 minute more. Season to taste with salt and pepper and serve these vibrant green delights to your hungry guests (who will love seeing a guilt-free dish on the table).

Ingredients

  • 1 pound fresh green beans
  • 4-5 cloves of garlic, sliced
  • knob of butter or 1-2 tbsp olive oil
  • 1 teaspoon soy sauce
  • flake salt and pepper to taste

Preparation

  1. Wash and trim the ends of the green beans. Set aside.
  2. Bring a pot with salted water to a boil. Once it starts boiling, add the green beans to it and cook for 3 minutes. Drain and set aside.
  3. To a pan, add the butter and/or olive oil. Once hot enough, add the sliced garlic and cook for 1-2 minutes or until golden and fragrant.
  4. Add the beans and cook for another 2-3 minutes, stirring well.
  5. Add the soy sauce, and season to taste with salt and pepper.
