Morel Mushroom and Asparagus Mini Quiche

Make Using Dried Morel Mushrooms Easy with This Quiche Video Recipe 

Everyone always asks, how do I use dried morels? What should I make with dried morels and how do I rehydrate morel mushrooms?  Well, the answer is really quite simple, you can make just about any thing you like with dried morels that you can make with fresh morels.  The key is to make sure you are getting nice meaty wild morels mushrooms and not farmed morels which have less bite to them.  In this video we are going to show you just how we make this tasty mini quiche that is perfect for any time of the day.


Asparagus and Morel Mushroom Quiche



1 readymade savory pastry sheet

1 tablespoon oil

1 teaspoon garlic, minced

2 tablespoon shallots, chopped

½ cup asparagus, cut in 2 inch pieces

½ cup dried morel mushrooms

½ teaspoon freshly cracked black pepper

Salt to taste

½ cup gruyere cheese


To make the egg mixture

2 eggs

½ cup heavy cream

½ teaspoon black pepper

Salt to taste

¼ teaspoon fresh thyme



  1. Preheat the oven to 375F.
  2. Place the morel mushrooms to bowl and add a cup of hot water. Let the mushroom soak for 20 minutes or until softened. Cut the softened mushrooms to pieces and keep it aside.
  3. Heat a skillet and add oil. Once the oil is hot add the minced garlic followed by shallots. Saute for 2 minutes. Add the asparagus and chopped morel mushrooms, cook for 3-5 minutes. Add the pepper and salt and remove the skillet from heat and set aside.
  4. In a glass bowl beat the eggs, heavy cream, black pepper, salt and thyme. Mix them until well combined and keep it aside.
  5. Cut the pastry sheet to 4 equal circles to fit the mini tart pans. Press pastry sheets into each cavity.
  6.  Sprinkle a layer of gruyere cheese over the pastry and top it with a spoonful of cooled asparagus and morel mushrooms. Pour the egg mixture on top of it and repeat the same with the remaining tartlets.
  7. Bake the quiche for 30-35 minutes at 375F until the egg mixture is completely set.
  8. Once done remove the quiche from the tart shells and serve while it is still warm.
