Spiced Pear Tarte Tatin

This classic baked upside down tart is filled with sweet pear that fills the air with wisps of your favorite spices!

While the pear is the star of the show in this classic recipe, fresh grated nutmeg, star anise and Vietnamese cinnamon are sure to win the best supporting role. This trio of spices give our pear tarte tatin a spice infused depth that is sure to please and is absolutely deserving of any and all the accolades. Pear Tarte Tatin Recipe

Prep time: 30 min

Baking time: 30 min

Total time: 1 hour

Servings: 8-10 

Ingredients

  • 4 tablespoons unsalted butter
  • ½ cup granulated sugar
  • 1 cinnamon stick
  • 2 star anise
  • A pinch of nutmeg, grated
  • 5 medium Bosc pears
  • 1 sheet frozen puff pastry, thawed

Directions

  1. Preheat  the oven at 375 degree F.
  2. Heat a 10-inch cast iron skillet over medium heat and add butter.
  3. Once the butter is melted, stir in the sugar. Reduce the flame to low and add in the cinnamon stick, star anise, and grated nutmeg.
  4. Meanwhile, peel the skin and remove the seeds and cut the pears into halves.
  5. Now arrange the pear halves into a circular pattern over the skillet (cut side up and narrow end pointing towards the center). Try to fit as much as you can within the skillet.
  6. Cook on low flame for 10 minutes until the sugar melts completely and turns caramel in color. Remove the skillet from the heat at this stage.
  7. Meanwhile, roll the puff pastry and cut them into a 12-inch circle. Carefully place the pastry dough over the pears and tuck the edges inside the skillet. Cut a 1-inch slit the center of the pastry (helps to cook the pears)
  8. Place the iron skillet in the oven and bake for 5 minutes. Reduce the oven temperature to 350 degrees F and bake further for 25 minutes until the pastry looks golden on top.
  9. Once done remove the skillet from the oven and flip the tarte tatin to a plate carefully. (upside down)
  10. Allow to cool down a bit and then slice a piece and serve with a scoop of vanilla ice cream to enjoy.
