Extract, Beans, or Powder: Which Should You Use?
Vanilla extract isn't your only option for adding vanilla flavor, but it's the most convenient. Whole vanilla beans deliver the boldest, most authentic flavor along with visible seed specks, but require splitting and scraping. Vanilla powder offers a concentrated flavor without moisture, useful in recipes where added liquid isn't wanted. Extract sits right in the middle: easy to measure, stores well, and works in virtually any recipe that calls for vanilla, sweet or savory, hot or cold. If a recipe calls for a whole bean but you only have extract on hand, one bean is roughly equivalent to 3 teaspoons of extract, a helpful conversion to keep in your back pocket.

We recommend following the weighted measure for consistency, since this compensates for natural size and shape variation in vanilla beans and aligns with the FDA's standard of identity for vanilla extract.
