Native to the Cobán region of Guatemala's Alta Verapaz department, home to some of Guatemala's finest specialty crops, including our allspice and green cardamom, these small, oblong chiles are renowned for their smoky-tasting heat, earthy undertones, and complex aroma, making them an essential ingredient in authentic Guatemalan cuisine and beyond.

Coban, or Cobanero chiles, have been grown in the Cobán region of Guatemala as far back as 250 AD, and although not considered rare in their native region, few purveyors carry them outside Guatemala. Luckily, you've found some of the highest-quality whole dried Cobanero chiles available outside of Guatemala.

Meticulously harvested and preserved with quality and authenticity in mind, our whole Coban chili peppers are:

Kak'ik is a traditional turkey stew rooted in the Q'eqchi' Maya communities of Guatemala's Alta Verapaz and Baja Verapaz regions, the same region these chiles call home. Deep red, smoky-tasting, and aromatic, Cobanero chiles are one of the dish's defining ingredients, contributing to its signature color and warmth alongside ingredients like tomato, cilantro, and achiote. In 2007, Guatemala's Ministry of Culture and Sports formally declared Kak'ik part of the nation's Intangible Cultural Heritage, recognition of just how deeply this dish, and the chiles behind it, are woven into Guatemalan culinary tradition.
