The growing and harvesting process of Ceylon cinnamon is very unique. The various stages of the process are: harvesting, peeling, rolling and drying, cutting and grading, and packaging. First a small Sri Lankan cinnamon tree, an evergreen tree in the laurel family, is grown and nurtured for about 2 years. The Sri Lankan cinnamon tree is then chopped down to a stump. After a short time, dozens of small shoots spring up from the stump. The shoots are allowed to mature and thicken to about two inches in diameter before being cut down. After being cut down, the green outer bark is then shaved and peeled off. The inner bark is then sliced, and struck evenly with specialized tools. The cinnamon bark is peeled in layers from the heart of the wood. This inner bark is removed in large sheets generally several feet in length or more, cut into strips, and air-dried. These strips are then curled into quills of cinnamon that are further dried in ovens or by baking outside under the sun. After achieving a sufficient "tan", the quills are cut, graded and sent on their way around the world, where they are prized by bakers, culinary enthusiasts, and holistic healers.
