I'm a convert

I've been making my own vanilla extract for over a decade and used to buy my beans based on reviews at a Infamous Global seller. Was never sure what I would get. Then I found this company! The beans were beautiful! Fragrant, moist but not too moist, easy to cut open to expose the seeds and each Bean was six to seven inches long. I'm a happy extract maker! 💝💃🥳

Whole Freeze-Dried Green Peppercorns for Soups, Sauces, and Dressings

Not your average peppercorns. Green peppercorns are the immature, unripe fruit of the Piper nigrum plant, the same plant that produces black peppercorns and white peppercorns. Because unripe green peppercorns decay quickly once harvested, they're typically preserved one of three ways: brined, dried, or freeze-dried. Ours are freeze-dried, which retains a fresher, more concentrated, and more vibrant flavor than brined peppercorns, without the added sodium that comes with brine.

Our green peppercorns come directly from the Indian Ocean island of Sri Lanka, where some of the finest pepper in the world is grown, the same region behind our cloves and nutmeg.

Freeze-drying removes moisture from the peppercorns while preserving their delicate aromatic compounds, resulting in a smooth texture and vivid green color that brining can't replicate. Green peppercorns are naturally milder than black pepper, since pungency develops as the pepper ripens and green is picked unripe, but freeze-drying preserves more of that fresh, concentrated flavor than brine does, since brining leaches some flavor into the liquid. Freeze-dried peppercorns also have a significantly longer shelf life than brined ones: properly stored, ours will keep for 24-36 months, while brined peppercorns typically only last about two weeks once opened.
