Chai Spiced Banana Bread

Ingredients
For chai spice mix
4 cardamom pods4 cloves
2-star anise
2 teaspoons ground cinnamon
1 teaspoon ground ginger powder
½ teaspoon ground nutmeg
For banana bread
1 ½ cups all-purpose flour1 teaspoon baking soda
½ teaspoon salt
2 teaspoon chai spice mix
½ unsalted butter, at room temperature
½ cup brown sugar
¼ cup granulated white sugar
2 eggs, at room temperature
1 teaspoon vanilla extract
3 ripe bananas (about 1 ¼ cups)
For the cinnamon cream cheese frosting
4 ounces cream cheese, softened¼ cup unsalted butter, softened
1 ½ cup confectioners' sugar
1 teaspoon ground cinnamon
2 tablespoons milk (optional)
½ teaspoon vanilla extract
Directions to make your chai spiced banana bread
- Preheat the oven to 350°F. Grease a loaf pan and set it aside.
- In a small jar, grind the cardamom pods, cloves, and star anise. Combine the ground spices with cinnamon, ginger, and nutmeg to create the chai spice mix. Set aside.
- In a medium bowl, combine the flour, baking soda, chai spice mix, and salt. Mix well and set aside.
- In another mixing bowl, add the butter, white sugar, and brown sugar; beat until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, followed by the vanilla extract, and beat well. Scrape the bottom and sides frequently and mix until pale and light.
- Add the mashed banana and mix until well combined.
- Gradually add the flour mixture to the wet mixture, combining until everything is well incorporated.
- Transfer the batter to the prepared loaf pan and bake for 55-65 minutes, until a toothpick inserted in the center comes out clean.
- Once done, cool the bread on a wire rack for 10 minutes.
- Meanwhile, prepare the cinnamon frosting. In a mixing bowl, beat the softened cream cheese and butter together until smooth and creamy. Gradually add the confectioners' sugar, ground cinnamon, and vanilla extract, mixing until the frosting is smooth. (Add a tablespoon of milk if you want to thin down the frosting.)
- Spread the cinnamon frosting evenly over the loaf bread. Slice and enjoy.
