Gold Garnished Fruit Display with Vanilla Bean Yogurt Dip

With fresh berry season right around the corner, cravings for those little colorful, sweet, and juicy delectables has really set in for me. I just couldn’t bring myself to wait any longer to create a spectacular fruit display (so, I didn’t). Of course, with amazing year-round ingredients, like gourmet vanilla beans, and gorgeous garnishments, such as edible gold leaf; I also couldn’t help but turn this an ordinary fruit display into an extravagant work of edible art!
And just like that, the plan for a gold-adorned fresh berry and grape display with vanilla and maple yogurt dip came to fruition.
The recipe for the vanilla yogurt dip is incredibly simple. With only two steps in the preparation, it should take no more than 5 minutes to whip up. Displaying the fruit, on the other hand, can take a lot or a little time, depending on how particular you are.
I like my displays to take on the appearance of organized chaos. What do I mean by organized chaos, you ask? Well, I don’t feel that each section of the display needs to match exactly, or that one half should mirror the other, or that the placement of each individual piece of fruit should be exactly in line with the one placed before it.
That said, I do like to incorporate somewhat methodical groupings of fruit types into the display and never pass up the chance to utilize complementary colors. As for the pieces of edible gold sheets, I find it to be more eye-catching if the flecks are of various sizes than uniform. I prefer them to be scattered around the display somewhat sporadically while ensuring each section and each type of fruit gets a relatively equal share.
Vanilla Yogurt Dip with Fresh Fruit Donning Edible Gold
- ⅔ cup sour cream
- ⅔ cup greek yogurt
- ¼ cup pure maple syrup
- 1 Tahitian vanilla bean
- 1 teaspoon pure almond extract (optional)
- 1 sheet of loose leaf edible gold sheets
- Various types of berries, grapes, and other preferred fruit
- Remove the seeds from the vanilla bean and reserve the pod for later use (try this vanilla sugar recipe).
- Mix all the ingredients together thoroughly and store in the refrigerator until you are ready to use.
Place the dip in the center of your platter. Wash and arrange the fruit around the dip. Using an application brush, gently pull small pieces of the edible gold from its booklet and sporadically place them atop the fruit. Serve at your next gathering, replenishing the fruit as necessary.
